INGREDIENTS

For Batti
2 Cups Wheat Flour
1/4 Cup Semolina (Rava)
1/2 Cup Curd
1 pinch Baking Soda
1 Tsp Sugar
1/2 Tsp Carom Seeds (Ajwain)
3/4 Bowl Clarified Butter (Ghee)

For Dal
1 Cup Toor Dal
1 Medium Onion chopped
1 Medium Tomato chopped
2 Red dried chilies whole
1 Tsp Mustard seeds
1/4 Tsp Turmeric powder
1 Tsp Red Chili powder
1 Tsp Ginger & Garlic paste
1/2 Tsp Cumin powder
1/2 Tsp Coriander powder
2 Tsp Oil
Salt to taste


METHOD
Step 1:
          Batti:
          Mix wheat flour, semolina, baking soda, sugar, salt, curd, ajwain and
           make a semi soft dough. Add water if required. Rest it for half and hour.
Step 2:
           Microwave: Make smalls balls and cook it for 2mins in microwave.
           Heat the cooker meanwhile the battis are cooking microwave.
           Add the battis (in batches) in the cooker, cook them on a very low flame for 15 mins.
           Flip them eventually after every 15 secs.
           Add 1 spoon of ghee to it after 2-3 mins and cook.
           Do not close the cooker with the lid or plate, keep the cooker open.
Step 3:
           No Microwave: If no microwave steam it the idli maker for 30-35mins.
           After cooking, deep fry or shallow fry those battis in ghee, as per your choice.
Step 4:
           Dal:
           Cook the lentil(toor dal), in cooker with sufficient water.
Step 5:
           Take a pan, add oil and once heated add mustard seed (let the seeds splutter).
           Add onion, salt, turmeric powder and cook well.
Step 6:
            Add red chilies, ginger & garlic paste. Cook for another 1 min.
Step 7:
            Add tomatoes, cumin powder, coriander powder, red chili powder and cook for
            another 3 mins till the tomatoes are completely cooked.
            Add the cooked and mashed toor dal and mix well, cook for 5min so that all the
            flavours are mixed.
            Serve hot, with extra ghee.
