INGREDIENTS
For Pakwan1 Cup Maida1 Cup Wheat Flour1/2 Tsp Ajwain1/2 Jeera1 Cup Water
For Dal1 Cup Toor Dal1/2 Tsp Turmeric Powder1/2 Jeera Powder1/2 Tsp Red Chilli Powder1/4 Tsp Garam Masala1/2 Tsp Dry Mango (Aamchur) Powder2-3 Slit Green chillies1 tsp Jeera1/2 Tsp Hing8-10 Curry leaves

METHOD
Step 1: Take a bowl, add1cup maida, 1 cup wheat flour, 1/2 tsp Ajwain, 1/2 Jeera, 2 tsp oil, salt and mix well. Add water to make a medium tight dough. Keep the dough aside for 30-45min.
Step 2: Wash the dal nicely and cook it in cooker with 2 cup water. Let it cook till 3-4 whistles. Remove the lid, add red chilli powder, turmeric powder, jeera powder, garam masala, dry mango powder and simmer for 7-8 minutes. Add water at this stage if required for medium consistency. Keep it aside.
Step 3: Take another pan, add 2 tsp of oil. Once the oil is hot, add jeera, green chilies, curry leaves, hing and cook for 30 secs. Add this to the dal and mix well.
Step 4: Take a dough, divide into small balls. Roll it to medium sized puris and prick it all over using the fork so that it does not puff while frying.
Step 5: Take a frying pan, fry each pakwan till completely cooked and golden.Serve hot with chutneys, onion & sev.
