ONION & COCONUT CHUTNEY

Ingredients
1 Coconut ( Dry or Fresh Coconut)
3-4 Medium Onion
4-5 Green Chilies
7-8 Garlic Cloves
1 inch Ginger
1/2 Lemon
1/2 spoon Sugar
Salt to taste
1 tsp Mustard Seeds
1 tsp Cumin Powder
1 cup chopped fresh Coriander leaves
5 tsp Oil
METHOD
Step 1:
               Chop the coconut into small pieces and grind well in the grinder(mixer). Keep aside.
Step 2:
               Chop the onions and grind it well along with green chilies , ginger, garlic. Keep aside.
Step 3:
              Heat the Kadhai, add oil. After the oil is heated add mustard seed to it and let them splutter.
Add onion paste and coconut paste to the oil.
Step 4:
              Keep stirring as it might stick to the kadhai. Cook until the raw aroma of onion is gone and the color turns light brown.
Step 5:
              Add jeera powder and chopped coriander leaves, mix well and trun off the heat.
Step 6:
             Add lemon juice and mix well.

#Note: The chutney stays fresh for a week. Oil required is more so that the chutney stays fresh. After 2-3 days of the chutney dries add 2tsp warm oil to it and mix.
