Aalu Samosa
Dough
2 cups Maida
2 tbs Vegetable Oil
¼ tbs Salt
½ Cup Water
½ cup water in bowl
Samosa Filling
2 Tbs Oil
1 tbs Coriander seeds
½ tbs Saunf ( fennel Seeds)
A pinch of Meethi Seeds
1 Tbs fresh Ginger Paste
1 tbs fresh Garlic Paste
1 tbs Red Chilli Powder
2 tbs Coriander
Powder
3/4 tbs Turmeric Powder
3/4 Tbs Raw Mango Powder
1/2 tbs Garam Masala powder
2 Large Potatoes Boiled, peeled and mashed
Salt to taste
Oil for Frying
Step 1:
Mix the flour and add salt and
oil. Rub the oil with flour till it becomes like breadcrumbs
Step 2:
Add ½ cup water and knead the
dough. Cover the dough with a damp cloth
and set aside till filling is made.
Step 3:
Samosa filling: Heat the oil,
add crush coriander seeds, saunf, meethi seeds. Fry the spices and add ginger,
garlic paste and green chillies and cook for few minutes.
Step 4:
Add curry leaves, remaining
spices and add mashed boiled potatoes.
Step 5:
Take lime size dough, roll it to
1cm thickness and then cut it into half. Make a cone stuff it with the stuffing
and brush little water on the open edges and close it. Keep aside all the
samosas.
Step 6:
Heat the oil and deep fry the
Samosas.
Serve hot.
#Tip: Make the samosas and keep them aside for 5mins and then fry so that the samosas become crispy as moisture will be less.
